Mango Chutney Recipe

If you're lucky enough to have plenty of mangoes about now... I recommend this chutney. It has a great sweet and sour balance. 

Spicy Green Mango Chutney Recipe

12 cups peeled and chopped green mangoes
2 cups vinegar (slightly less if you use apple cider vinegar)
6 1/2 cups sugar
1/2 fresh grated ginger
3 cups of raisins 
1/2 cup fresh hot peppers (jalpenos or red chiles are nice) 
1/2 chopped onion
2 cloves chopped garlic

1. Bring vinegar and sugar to a boil in a good size pan just until sugar dissolves. 
2. Add rest of ingredients and return to a full boil. 
3. Reduce heat to low and cook for additional 10-20 minutes until the mixture thickens to a thin syrupy consistency. 
4. Fill sterilized jars with mixture and do a boil bath for 15 minutes. 

Makes about 6 pints.
